Grilled Corn with Zucchini and Peppers

The weather is starting to warm up and that means grill season at our house.  We start grilling when the weather is nice and grill pretty much every night until October.  We definitely eat the best this time of year.  Seasonal and fresh.  And so to kick of the season I am sharing a great recipe for a side that goes with any kind of meat.  It even tastes great in a taco salad.  Enjoy!

Corn with Zucchini and Peppers

1 pint of fresh, frozen, or canned whole kernel corn (Drained)

1 cup of chunked up or sliced zucchini

1/2 cup diced green, red, or orange peppers

1/4 cup diced onion

1-2 tbsp olive oil

1/2 tbsp minced garlic

1 tbsp dried cilantro (fresh is great if you have it!)

salt and pepper to your liking

Mix all vegetables with oil and spices.  Wrap in foil and place on grill for about 20-30 minutes.  You can also roast it in a casserole dish in the oven set at 350 degrees for the same length of time.  Delicious!
