Buckwheat and Blackberry Breakfast

I love these!  I made them one Sunday morning and my 1 year old ate her pancake and her sister’s!!


Buckwheat Pancakes with Blackberry Compote

1 cup buckwheat flour

1/4 tsp baking soda

2/3 tsp baking powder

pinch of salt

3 tbsp. maple syrup or honey

1 1/4 c. half and half or whole milk

1 tbsp. butter melted

1 egg


Whisk together dry ingredients.  Beat egg and add to melted butter, syrup, and milk.  Combine wet and dry ingredients until mixed.  Heat skillet on med heat.  Grease with butter.  Cook 1/4 cup of batter until top starts to form surface bubbles.  Flip pancake and cook until bottom is browned.  Makes about 7 pancakes.

Blackberry Compote

Boil 1 1/2 cups blackberries with 1/2 cup water and 1/4 cup brown sugar. Turn heat to low and stir until you have a lumpy syrup.  Serve over hot pancakes.
