This was our supper tonight. Pretty easy to make and doesn’t take a lot of time.
Ginger Beef and Shrimp
1 lb. minute, round, or sirloin steak
20-30 small deveined and peeled shrimp
3 carrots peeled and cut into strips
1 medium onion sliced into rings
1 red bell pepper or 3 banana peppers cut up
1 tbsp olive oil
2 tbsp minced garlic
1 tsp dried mustard
1 tsp dried red pepper
2 tsp ginger
1 tsp chili powder
1/4 cup soy sauce
2 cups brown rice
Cook rice according to directions. Heat olive oil in pan over medium heat. Add vegetables and saute for about 5 minutes. Add Meat and spices. Cook until meat starts to brown. Add Shrimp and soy sauce. Reduce heat and cover. Cook for another 10-15 minutes. Serve over Rice. Makes about 4 servings.
