Fish Supper Recipes


For those that would like some of the recipes I use I will do posts from time to time to include these.  These are  from last week.

Fish sticks

3 large swai fillets cut into strips

1 cup corn meal

1/2 cup Masa (corn flour)

1/2 cup to 1 cup olive oil

2-3 tbsp. butter (not margarine!)

salt to taste

Heat oil and butter over medium heat in skillet.  Mix together corn meal and masa.  Coat fish with corn meal mix.  Test oil by splashing water off your fingertips into skillet.  If it sizzles it is ready. cook fish on both sides until golden brown 6-10 minutes per side.

remove from heat and put on plate covered with a towel or paper towel.  This will help absorb excess grease.  Salt to taste.

Oven Fries

Preheat oven to 400 degrees

Clean 5-6 potatoes ( can be white or sweet)

Peel if you would like ( l like them with the peels the girls do not)

Cut into wedges or 1/4 in. to 1/2 in. strips

Grease a cookie sheet and spread potatoes on sheet.  Make sure they are all separated.  Salt lightly.

Bake for 30 minutes. Salt lightly when you removed them from oven.
